Vegan spinach crepes are rather difficult to find. But, after searching for quite awhile, we found this great recipe on Vegan Kitty Patrol (VKP). The crepes are delicious and you can use them with many different fillings or sauces. They use the traditional vegan ingredients and cook up very well.
As a special spring brunch, we enjoyed them with a vegan “Alfredo” sauce and fava beans. We made the sauce using soy yogurt, a bit of mild mustard, nutritional yeast, minced onion, a splash of white wine salt and white pepper. We garnished added the fava beans to the sauce and put a few on top, then garnished the meal with a few freshly chopped chives.
